A Visit to Cloudland Chinese Cuisine

A group of Year-3 students of Bachelor of Arts (Honours) in Culinary Arts and Management (CAM) visited Cloudland Chinese Cuisine on 22 November, 2019. The restaurant is famous for making Cantonese fusion dishes in Hong Kong. During the visit, they also interviewed the master and star chef, Paul WONG, to learn about the kitchen structure, layout, personnel positions, communication with F&B, ordering procedures (external and internal) and other operational aspects.
