Singaporean cuisine reflects its unique historical and cultural development. Therefore a 5-day cultural exchange tour was organized by CAM and HOM programmes for 20 students to experience this exotic food paradise, and visit local culinary institutes and prestigious hotels.

Students were fascinated by the variety of local cuisines after participating in the cultural tour, gourmet tour and cooking class. The trip had reinforced their knowledge in food culture and aesthetics, sensory evaluation of foods and beverages, kitchen and restaurants operations, not to mention culinary techniques.

Through interactions with local students and hotel practitioners, students had gained a better understanding of the hospitality and culinary development in Singapore. Their horizon had been broadened – knowing the opportunities for further study and work in the fields of hospitality and culinary in Singapore and South East Asia.

Collaboration between THEi and various partner organizations in Singapore had also been strengthened. For instance, At-Sunrice GlobalChef Academy and Nanyang Polytechnic had initiated a discussion on organizing exchange activities. The Ritz-Carlton Hotel and Regent Hotel also showed interest in taking up student/graduate interns from CAM and HOM programmes. Hopefully these might benefit more THEi students in the future.
